Cover the pan and cook the fruit over low heat until it breaks apart. Cook without the lid until all of the water has evaporated. In a small, high-sided skillet, add oil or shortening. Place in a medium-sized pan. Spoon equivalent measures of filling into every cake circle and overlay fifty. Seal baked good with a fork dunked in cool water. Brown the pies on both sides by frying a few at a time in hot oil. Using paper towels, drain the pies. |
